Make Tempering Chocolates Easier with a Chocolate Tempering Machine

Delicious chocolates can definitely boost up one’s moods whatever variety you choose. There are three: the dark (sometimes called bitter) chocolates, the milk (sometimes called semi-sweet) chocolates, and the white chocolates.
Dar chocolates are made with cocoa butter, chocolate liquor and a little sugar. If it gets too bitter for the taste, manufacturers add vanilla to weaken the tang. Milk chocolates have the addition of milk to sweeten it. Chocolate liquor is absent in white chocolates so purists see it as non-chocolate, though because of the cocoa butter, white chocolates still need tempering.
If you temper chocolates, you impart a longer shelf life, shine, snap, creamy texture and heat resistance. Tempering also stops blooming from happening, which turns chocolates whitish-gray on the outside.
Artisanal chocolatiers prefer manual tempering, often with the tabliering technique, and they have acquired the necessary expertise and perseverance for it over the years. But manual tempering can be pretty difficult and if you allow minor fluctuations in temperatures or don’t mix melted chocolate properly, the production of type V crystals is hampered. You can find yourself tempering over and over again, should that be the case.
For continuous and large-scale confectionery productions, you’ll need to produce only the type V crystals that make chocolates shiny and crisp and you can do that easily with a chocolate tempering machine only. There’s a computer chip within the machine that maintains accurate temperatures and prevents fluctuations from happening. These countertop appliances are great when there’s not enough work space or humidity’s an issue in your kitchen.
Tempering large quantities of chocolates by hand could be prone to product inconsistencies so to avoid that, you should only use a tempering machine. Before getting one though, you need to know how many of your people will work with the machine and for how many hours.
The Revolation 1 from ChocoVision should be good for relative beginners as it can manage only 1.5 pounds per load cycle. For the beginner who can manage up to six pounds of chocolate, there’s the ACMC Tabletop Temperer. It has a clip-on steel bowl, a digitized thermometer, upfront panel controls and displays for easy monitoring, and it comes with two 100-watt light-bulbs as heat source.
For the chocolatier newly shifting from manual tempering to chocolate tempering machines, there’s the Revolation 2, muck like the Rev 1 but with such additional features as an electronic temperature display, a temporary stop selection, and an overnight holding option.
If you plan to temper larger quantities of chocolates, like three to 10 pounds, the Revolation x3210 is the ideal tempering machine. It’s much similar to the Rev 2 with its pausing option and overnight standby mode.

Chocolate Tempering Basics

#1 Jenny:
The charm of chocolate comes from its glossy, smooth, delicious appearance; the ample creaminess you can feel on your tongue; that crispy and crunchy bite; and the sharp snapping sound that you hear when you break a chocolate bar. Tempering of chocolate, when properly done, does that to your adored chocolate “fix”. Tempering is a method that involves melting of the chocolate, then cooling and allowing it to stay at constant and specific temperatures while working.
Chocolate tempering is a critical phase in processing cacao beans and in making chocolates because it needs to stabilize the fatty crystals contained in cocoa butter. Cocoa butter has several fatty acids that melts and solidifies at various temperatures. The tempering process makes the fatty acids form into crystals and maintain a uniform structure.
Chocolate tempering demands precision so this is a process that is could get tedious when manually done. If you’re tempering chocolate for the first time, it’s likely to be a trial and error experience because you need to familiarize yourself chocolate temperatures and you have to learn the skills so that you can improve and be a master in tempering chocolates.
One way to temper chocolate is to melt the chocolate then work it on a heat-absorbing slab and wait until the chocolate is cooled to desired temperatures before using them to make candies.

Consider these factors: hot temperatures in your work area, the presence of moisture in handling the equipments, the reliability of your thermometers, your ability to focus on the task at hand and so much more. Commonly, chocolatiers has to contend with problems not on tempering proficiency but on such inevitable variables that leads to lose of chocolate temper. This is why a chocolate tempering machine is there to ease these concerns off your shoulders. The machine will allow you to leave the chocolate for more than an hour and not be worried if the temperature is accurate or not. The tempering machine has a computer chip to regulate the temperature that automatically produces the desired hotness, coolness, and reheating cycles so that you will no longer need to do the tempering over again should you miss.
And one of the best advantage ever is that a chocolate tempering machine will provide you ample time to focus on the inventive side of chocolate making, as well as other things that you require to carry out in order to improve your reputation for excellent chocolate products!

Graffiti: Not Just Art

The mainstream artworld has had a love/hate relationship with graffiti. On the “good press” side, talented creatives such as Banksy have made graffiti an aesthetic pleasure, utilising stencils to create technically tricky graphics with political points attached. This sort of graffiti was certain to get popular with the public and the artworld : attractive to both eye and intellect. This type of graffiti is now even purchased as prints on canvas, and placed in middle class households and office reception areas.

However, what of the usual sort - the gangbanger, the tagger, the street urchin - this sort of graffiti is oftentimes seen as antisocial, an offence committed by the untalented. However this is to misinterpret graffiti as strictly an art form. To many people, it’s not only art, but a way to mark territory, or even a two finger salute : anti-art, anti-social, anti-establishment.

Graffiti has invariably been a clandestine pursuit, even though the effects are very much public. The targeted audience is often unknown. Is it for a rival gang? A message to a single person? To the public? Or….perhaps it’s merely gratuitous and out of boredom.

Whatever the causes may be, there appears to be a sustained need to spray on walls. Some cities have admitted that graffiti isn’t a short-term craze, so they’ve marked off areas where graffiti is allowed - usually uninhabited areas, but now and then busier areas like temporary boarding surrounding urban construction sites.

How to Graffiti with Stencils

Stencilling has actually been around for 25 years, even though many people think Banksy invented it. You can use cardboard, paper or other types of media (such as plastics) to produced templated graphics and text. You merely cut around the shapes from your cardboard/paper/other surface, put then place this surface against a wall (for example), and roll-on paint or spray into the cut-out shapes.

In effect, the art of stencilling involves applying paint across a stencil to form an image on a surface underneath. Sometimes multiple layers of stencils are applied on the same image to add colours or give the image some depth.

So why do some individuals prefer to be a stencil artist? For a few, it is a great platform to communicate a political message. Many stencil artists appreciate the publicity that their art can obtain. Some simply want their art to be seen. Since the stencil remains unchanged throughout its use, it is easier for an artist to speedily duplicate what could be a complicated artwork at a very speedy rate, when equated to other traditional tagging methods, so without question, there is also a powerful self-promoting reason to prefer stencilling.

Banksy has applied stencilling as a means to put a point across, often rather succinctly, leaving the spectator to get the message themselves. This is often why people enjoy his artworks so much, as they make the viewer think. Banksy artwork is being reproduced on posters, t-shirts and canvas, such is the popularity of the street artist.

Life is a Fantasy

LIFE IS A FANTASY!

A pink-eyed rabbit, fuzzy white

Hops in bedrooms filled with fright

A child of six with much to know

Her father’s basest feelings show

She knows of LOVE, only through him

He satisfies his every whim

He leaves, she wipes him

from her chin!

Her mother NEEDS to see the best

He answered her God request

To have a roof to comfort bring

A yard where all the birdies sing

Tell me how she could really know

What source for learning could she go?

Her mother regularly beaten if not worse

The cycle of violence - a woman’s curse

Conflicting visions, dependencies

One can endure many idiosyncrasies

She could not make him defendant be

Denial, avoidance… she disbelieves

The rabbit hides beneath tall trees.

At thirteen a step-grandfatha’

Finds a well-trained girl that oughta’

Do what powerful men request

Never knowing what is best

And run away she does at last

Freedom can be such a ‘blast’

A rabbit’s foot upon a chain

The FANTASY her ’safe’ domain

How long in life must it remain?

To protect her from these men

Who always for her lips, do ‘yen’

A state trooper in Tennessee
Like every other man does see
Her lips so full and luscious red
Through the bars, not in a bed.
This life men bring to little girls
Even when their hair yet curls

The visions in her soul I saw

Ripped my soul - made it raw

I can understand the rage and WILL
To take a life and even KILL

Just forgive and let it go
The therapists say, what do THEY Know?

Einstein says “Where the world ceases to be the scene of our personal hopes and wishes, where we face it as free beings admiring, asking, and observing, there we enter the realm of Art and Science.”
